Synopsis 124 Recetas de la cocina medieval española
Por aquellos entonces, el 90% de la población era pobre, o muy pobre. Gran parte de esa sociedad, estaba repleta de lacayos, pobres vergonzantes, pordioseros, pedigüeños, estudiantes, peregrinos, pícaros, vagabundos, falsos tullidos, caballeros de mogollón, sopistas y multitud de desnutridos en general, hasta llegar al último escalón con los esclavos y cautivos, que eran alimentados prácticamente a base de pan y agua. Una buena parte de los moradores de las grandes urbes, dependía de la sopa boba. Esa cara del sustento resultaba muy sombría. Con un poco de suerte accedían al pulmentum, que era un potaje u olla de legumbres, verduras, ajos y cebollas. En algunas ocasiones llevaba cereales con algo de carne o huesos, queso y huevos. Eso sí, siempre había pan para mojar, aunque fuera pan negro. En casa del pobre, de postre quedaba el último bocado y, la gallina. ¿Qué era la gallina de sobremesa Una vez terminada la comida y retirados los pocos atuendos y menaje del festín, sin apartarse los comensales de alrededor de la mesa, se metían la punta del dedo índice en la boca para humedecerlo. Seguidamente se buscaba alguna migaja o resto de comida que había quedado por encima del tablero. Estos restos se pegaban a la yema del dedo mojado de saliva, llevándolos a la boca. Esto se hacía a gran velocidad y todos los comensales al tiempo, cual si de una bandada de gallinas se tratara. No era necesario limpiar la mesa. El otro pequeño porcentaje de habitantes de la época estaba formado por la nobleza, el clero y los comerciantes ricos, donde se daban los banquetes desmesurados, algo similar a los cuentos y leyendas propios de la Edad Media. En estas casas se podían permitir tener cocineros creativos, a base de don dinero y mucha imaginación, forjando recetas que dan lugar a los pilares de la Arquitectura de los Aromas y los Sabores, pura Alquimia de Fogones. Un viaje sin retorno para el olfato y el paladar
